Chicken Chile Verde

So...you've got a plethora of green tomatoes.
You've made salsa verde.
You're hungry and kind of lazy and want something that can cook in the background.
Take some frozen chicken breasts, a jar of salsa verde and fill the jar with water to get all the goodness into a roasting pan.
Cover with tinfoil and place in a 180c oven for 60 to 90 minutes.
Make a pot of rice.
Take the chicken out of the oven and use two forks to shred the chicken. If the sauce is too loose. Turn on the heat and reduce the sauce while you simmer the chicken.
Make a side dish of veggies if you want or just enjoy chicken and rice.
Tonight we made sauteed mushrooms, yellow onion, green beans and patty pan squash from the farm with garlic powder to go with the chicken.
Garnish with sour cream and the cheese of your choice for a filling and cozy meal.
